Fresh salsa is the perfect condiment for a Cinco de Mayo fiesta. Salsas are great served with warm chips or as a topping for fish, chicken, and beef. Here are three quick and simple salsas that guests will love .
Tomato Salsa (Pico de Gallo)
Dice 2 medium-sized fresh tomatoes. Then trim, seed, and dice 1 jalapeno chili and 1 Serrano chili. In a bowl, combine tomatoes, chilis, 1/2 of a finely diced red onion, the juice of one lime, ½ cup chopped cilantro, and salt and pepper to taste. If the salsa is too hot, add more diced tomatoes. Chill for an hour to allow the flavors to combine. Makes approximately 3-4 cups.
Dice 1 large mango. In a large bowl, combine 1 diced roma tomato, 1 tablespoon chopped cilantro, 1 teaspoon fresh lime juice 1 tablespoons green onion and a pinch of salt. Optionally, add finely diced Serrano chili. Refrigerate until ready to eat.
Black Bean Salsa
Combine 45 ounces of canned black beans, 11 ounces of canned white or yellow corn ( drained ), 20 ounces of diced tomatoes with green chilies (drained), 2 diced tomatoes, 1 bunch of chopped cilantro, 2 cloves of crushed garlic, and the juice of the one lime. Chill overnight and garnish with additional cilantro.
